    • Soy Sauce, to taste (light soy sauce recommended for subtle color and flavor)
    • A splash of Baijiu or Chinese white spirit (optional, about 1 tablespoon; alternatively, use a dry sherry or a splash of vodka. This helps ‘cook’ the prawns slightly and adds complexity)
    • A few whole Sichuan Peppercorns (optional, for a subtle tingle)
  • Note for Western Cooks: “Baijiu” is a distilled Chinese spirit. If you can’t find it, a dry sherry or even a neutral vodka will work well to add an alcoholic kick and complex aroma to the marinade.
