Savory One Pot Harvest Stew with Fluffy Flower Rolls

  • Green Beans: A generous handful of fresh green beans.
  • Aromatics: 3 cloves garlic, minced; 1 small knob of ginger, minced (optional); 2-3 scallions, chopped; 2 small red chilies (like Thai or Bird’s Eye), finely chopped (optional, for a little heat).
  • Spices: 5-6 Sichuan peppercorns (optional, but highly recommended for their unique, tingling flavor).
  • Liquids & Seasoning: 2 tablespoons light soy sauce (or regular soy sauce/tamari); 1 teaspoon salt (or to taste); 1 teaspoon chicken bouillon powder or MSG (optional); about 2-3 cups of water.
  • Oil: 2 tablespoons of a neutral cooking oil, like canola or avocado oil.

For the Flower Rolls (Huā Juǎn):

  • Dough: You can use a pre-made dough, like refrigerated pizza dough or biscuit dough, for an easy shortcut. Or, make a simple yeast dough: 2 cups all-purpose flour, 1 teaspoon instant yeast, ½ teaspoon salt, and ¾ cup warm water. Knead until smooth and let it rise for an hour until doubled.
  • For the layers: 1 tablespoon vegetable oil, ½ teaspoon salt, 1 tablespoon all-purpose flour for dusting.

Now, let’s get cooking! This process is a wonderful dance between making the stew and shaping the rolls.

  1. First, prepare your green beans. Trim the ends, remove any tough strings, and wash them thoroughly.
  2. Next, get your pumpkin ready. We’re using half of a small one.
  3. Peel your potato.
  4. In a large pot or Dutch oven, heat one tablespoon of oil over medium-high heat. Add the green beans and stir-fry until their skins are slightly blistered and charred in spots. This adds a fantastic smoky flavor. Remove them from the pot and set aside.
  5. Chop your peeled pumpkin and potato into bite-sized chunks. Using leftover stewed pork is fantastic because the vegetables will soak up its flavor and the meat will become even more tender. This trick also shortens the overall cooking time.
  6. Finely chop your scallions, garlic, and chilies.
  7. Add the remaining tablespoon of oil to the same pot. Heat it over medium heat and add the scallions, garlic, chilies, and Sichuan peppercorns. Stir-fry for about 30 seconds until fragrant.
  8. Add the cubed potatoes and corn kernels to the pot and stir to coat them in the aromatics.
  9. Return the blistered green beans to the pot.
  10. Pour in the light soy sauce and stir everything together.
  11. Add enough water to almost cover the vegetables.
  12. Now, add your stewed pork to the pot.
  13. Bring the mixture to a boil, then reduce the heat to a simmer. Let it gently stew while you prepare the flower rolls.
  14. Get your workspace ready for the rolls. Lightly flour a clean surface or board.
  15. If you made your own dough, place the risen dough on the floured surface.
  16. Roll the dough into a large, thin rectangle.
  17. Brush the entire surface of the dough with oil.
  18. Sprinkle it evenly with salt.
  19. Dust a light layer of dry flour over the oil and salt. This helps create the beautiful, distinct layers.
  20. Tightly roll the dough up from one long side to form a log, then slice it into equal-sized pieces.
  21. Take each piece for your roll.
  22. Gently twist each piece to create a “flower” or knot shape. Don’t worry about perfection; they will look beautiful once steamed.
  23. The aroma from the stew should be incredible by now!
  24. Check on your stew; the potatoes should be getting tender.
  25. Now add the pumpkin chunks to the pot and sprinkle with salt. Pumpkin cooks faster, so we add it last.
  26. Add a little more water if needed, but the level should be below the top of the pumpkin. You want the rolls to steam, not boil.
  27. Gently place the prepared flower rolls directly on top of the stewing vegetables.
  28. Arrange them in a single layer until the surface is full.
  29. Cover the pot with a tight-fitting lid and let everything cook for a final 15 minutes. Do not lift the lid during this time! This allows the rolls to steam perfectly.
  30. It’s time for the big reveal! Carefully open the lid.
  31. Your flower rolls should be plump, fluffy, and cooked through.
